Healthy slow cooker recipe: Indian Goulash

With a slow cooker, anything that comes out of it at the end of the day will taste good as long as all the flavours make sense.  This one is the easiest, most nutritious, yummiest, cheapest, and most convenient!

If I could only make one more thing for the rest of my life, it would be what I made yesterday for dinner, or any variation thereof. Nutritious, easy, delicious, keeps in the fridge for meals all week, and completely different every time!

In a slow cooker (on low all day, or on high in a few hours):

  • huge can of chick peas (rinsed)
  • huge can of mixed beans (rinsed)
  • lots of chopped onions
  • few handfuls of lentils
  • can of coconut milk
  • tumeric
  • curry
  • cumin seeds
  • garam masala spice

So when you get home from work, all you do is put lots of rice on (I use wild a brown wild long-grain mix from the bulk section) and chop up some fresh cilantro. Throw a couple spoonfuls of a chutney on the side, and you’ve got yourself bowlfuls of bliss.  I mix the rice and the indian goulash together and spoon the mixture into those little lunch size tupperware containers.  Stack em up in the fridge and work on em all week long. A great alternative to spending ten bucks on lunch!
